If this is your first stay at ryokans, you should stay at modern ryokans.  Facilities tend to be the latest.  You wouldn’t feel stressed during your stay.  Also, you wouldn’t need to sleep on Japanese-style mattresses in tatami rooms.  There are some western-Japanese rooms with twin beds on tatami mats.
